Marathon training begins

A look at life in Snoqualmie through the eyes of a local.

As constant thoughts of fund raising for the leukemia society and

walking a 26.2-mile marathon sink in, I am finding it harder and harder to

sleep at night. It is all quite thrilling and at the same time intimidating, but

there are many things to learn and experiences to be had.

One learning experience has been driving in Seattle. I have had to

find my way to different Seattle locations and quickly found that when you

miss your turn and think you’re so smart you will just go up a street and

turn around, you soon find it is a one-way street. Those one-way streets make

it hard to retrace your steps and get back to point A.

Group-training is a lot of fun, and it also forces us all to push

ourselves a little bit more than if we were walking by ourselves. Nobody wants to

be last. During the week we work on our speed and on the weekend we will

be working on endurance.

This is definitely going to be a once-in-a-lifetime experience, and

I have decided to somehow find the time, between training, fund

raising, cleaning house, spending time with my boyfriend and family, to keep

a diary.

Here is a nummy recipe dedicated to Michelle at the Valley

Record: Fudge Brownie Sundaes!

Line an 8-inch square baking pan with foil and coat with nonstick

cooking spray. Over low heat in pot, melt 1-c. butter with 4

oz.-unsweetened chocolate. Remove from heat, whisk in 1 2/3-c. sugar, 4 eggs (room

temperature), 3/4 c. flour, 1 tsp. vanilla extract, and 1/4 tsp. salt until

smooth. Stir in 1-c. semisweet chocolate chips. Pour the batter into the pan and

bake at 350 for 40 minutes or until a toothpick inserted in the center comes

out with moist crumbs clinging. Cool completely in pan on rack.

For the sauce, heat 3/4-c. sugar over low heat without stirring

until melted. In thin, steady stream stir in 3/4-c. heavy cream and 1 tsp.

vanilla extract. Increase the heat to high and cook, stirring until lumps of sugar

dissolve. Remove from heat and cool at least 20 minutes. Remove

brownies from pan and cut into squares. Top each with 1/3-c. ice cream and

caramel sauce.
