Here’s what to do with turkey leftovers

What glorious weather we had the weekend of the 12th. I went for

a seven-mile walk up in the Ridge Sunday night and with the warm wind

was actually able to wear shorts and a T-shirt and no coat. I hung clothes

on the line at 4 p.m. and they were dry by 7 p.m. Don’t you just love the

warm windy weather?

With Thanksgiving around the corner, wouldn’t it be a good time to

let friends and family know you’re thankful for them? Try writing a list

of things you are thankful for and mail it to everyone who is special in your life.

Do you love leftover turkey but want something new to try besides

just reheating leftovers? How about sweet and sour turkey with rice? In

medium- sized saucepan combine 1/2-c. packed brown sugar, 1/2-c. chicken broth,

1/4-c. lemon juice, 2-tbsp. soy sauce, and 4-tsp. cornstarch. Cook and

stir until thickened and bubbly. Stir in

3-c. cubed cooked turkey, 20-oz. can pineapple chunks packed in

juice, drained, 3 medium green onions, diced, and 1/2-c. chopped red bell

pepper. Heat through. Serve with rice and sprinkle with 3 more green

onions, sliced, and 1/4-c. chopped peanuts.

I love to bake but hate recipes where I have to beat sugar and

butter together. If you warm the beaters first by running them under hot water

for one minute, they soften the butter and make blending easier.

Brian and I went up and looked at the Snoqualmie Falls while the

rivers were high and got soaked all the way through from all the mist. I love

looking at the Falls but never seem to get up there. I guess we all tend to

take our local attractions for granted. The Falls are quite an awesome sight

when going full blast.

Eggnog is now available in the store. Have you ever tried French

toast made with eggnog instead of milk? Yummy! And if you use French

bread or sourdough bread … double yummy. Sprinkle some powdered sugar

over the toast also.
