Restaurant promoting local fare

A new restaurant, slated to open this month in North Bend, will serve up locally- produced foods with an eye toward supporting organic growers.

A new restaurant, slated to open this month in North Bend, will serve up locally- produced foods with an eye toward supporting organic growers.

The ©green restaurant and lounge (pronounced “sea-green”) will serve lunch and dinner when it opens Friday, April 18 at 228 W. North Bend Way, in the former location of Banlican Bistro in North Bend’s historic downtown.

Local business owners Lauren and Bill Carroll and Chef Greg Claus are behind the new restaurant, which will feature Pacific Northwest-inspired dishes prepared by Claus.

Local growers and producers, including Bybee Farm, Full Circle Farm, Thundering Hooves and TH Seafood, will provide sustainably-harvested produce, meats and line-caught seafood, the owners said. The owners of ©green said it is their vision to provide the community with a restaurant that serves healthy, reasonably-priced fare in an atmosphere that is welcoming to families, and supportive of the Snoqualmie Valley community.

Working in collaboration with Claus, local architect and design team Dick and Sallie Burhans created a remodeled interior with a comfortable, inviting and gallery-like atmosphere for guests. The restaurant features oil paintings by R.W. Burhans, and pieces that local artisan Ellen Marden created using reclaimed materials.

Claus plans on using the bountiful products available from local producers and farmers markets as inspiration for designing interactive cooking demos, new recipes, and blog posts with the goal of nurturing the health of the community and environment.
